I occasionally produce a large food conglomeration in the form of either chili or tacos. Tacos are actually more complex as all the ‘fixings’ like lettuce, tomatoes, sour cream, etc. are part of the meal, but both options feed Irene and I for multiple days.
Earlier this week my meal of choice was tacos, and I had a craving for something Taco Bell flavoured: I wanted to re-produce the double decker taco.

Adding the second deck
Making a double-decker taco was an experiment for me. The basic elements are both hard and soft shell tacos plus refried beans: the beans were something I’d never had in the house before. I found refried beans right on the shelf next to the other taco condiments at Safeways.

The contents of the tin even looked right- a grayish glop with bits of bean. I spread some on a soft shell taco with a spatula and put a hard shell taco (stand-up variety) in the middle. I then filled the hard shell taco with the usual (beef, lettuce, tomatoes, cheese, sour cream, and salsa) and sort of folded the burrito / soft shell taco over it.
The outcome
I ate four of the buggers in quick succession: at least one more than I should have. The taste was perfect: better than Taco Bell’s offering, which I had been missing for some reason. Of course I use a lot more beef, cheese, and other condiments: my tacos are a mess to eat, and per taco are definitely not cheaper than the Taco Bell offering. Have you priced out fresh tomatoes lately? $6.50 a pound- yikes!
But I didn’t care: I almost growled at the cats when they came to investigate- stay away from my food! The dog knew I was hangry and kept his distance. Apparently my big dog vibes were working for a change.
Anyway, I have a new favourite way to eat tacos: that extra layer with refried beans turns them into a real treat. Only at home mind you, and without any critical viewers as this is a messy food to eat, especially the way I eat them.
